What’s a truffle?

16-01-2009

Dear Editor,

What’s a truffle?

Nipon T. Bangkok

Dear Nipon T.,

It is a wild black mushroom which usually grows under oak trees. It resembles a potato and depending on its species and geographical location, it can appear in gray, yellow or brown. During the late 17th century in France, the truffles were very expensive so that they gained real prominence as a royalty ingredient in gourmet cooking.
