What’s foie gras?

16-12-2008

Dear Editor,

What’s foie gras?

Tess

Dear Tess,

Foie gras is the fattened liver of duck or goose. Though the process of force-feeding fowl to increase liver size originated in Egypt and was brought to Europe, France is the world's largest producer of foie gras today.
