The legacy of Iron Chef Masaharu Morimoto has arrived in Singapore. Zento, owned by chef Gunawan Wibisono - trained under the watchful eyes of Morimoto(He found fame on Food Network's "Iron Chef America.") - opened its doors at Dempsey Hill just a month ago.
Once head chef at New Jersey's Iron Moto restaurant, Wibisono brings along the same creative flair to Zento, which specialises in American-Japanese cuisine. Expect sushi rolls such as tuna eel, masago, avocado and plum paste wrapped in soy paper instead of seaweed, as well as riceless makis stuffed with crab, shrimp and avocado. Traditionalists might balk at the choice of ingredients like the mango sashimi or the use of cream cheese slathered inside sushi rolls, but kudos to the chef for marrying each ingredient with panache.
That's not all. The soya sauce is freshly brewed and wasabi grated every day. A must-try is the Zento Square Sushi. Tinged with the refreshing taste of plum and topped with skillfully cut layers of eel, avocado and tuna, then glazed with an imported sweet and spicy sauce, it's simply to die for. It probably helps that the chef's wife is also the co owner, who is deeply familiar with the F & B business, ensuring quality and service are maintained at all times - James Leong
