Waku Ghin

Now we don’t have to wait for months to enjoy Chef Tetsuya Wakuda’s highly lauded food. The culinary heavyweight’s first outpost showcases his exquisite menu using the finest ingredients, topped with sparkling views of Marina Bay. The much-anticipated opening of Waku Ghin has certainly met the high expectations of diners in Singapore. The menu presented omakase-style starts at $400 per person. The entire experience feels incredibly exclusive – after all only 25 people can dine here during one seating (there are two for dinner). The restaurant’s long counter seats allow you to watch the skilled chefs prepare dinner right in front of you.

Tetsuya is famous for sourcing the most pristine seafood for his restaurant in Sydney. Here, he flies in exquisite items that will impress even the harshest critic.  One of the star signatures is the salad of sautéed bamboo clams partnered with soft garlic cream. The well-thought-out and memorable dish also comes garnished with a sprinkling of roasted capsicum, croutons, Korean chilli strips, and salty Chinese preserved olives. Another specialty is the botan ebi paired with sweet creamy sea urchin from Hokkaido and generous mound of fine salty oscetra caviar. A chef then comes to your counter to prepare luxurious Alaskan king crab for you on the sizzling teppan grill. The crab’s sweetness is then further livened up with a touch of olive oil and lemon before you tuck in.

Besides seafood, the meats are beautifully executed too. The well-marbled Australian wagyu beef is thinly sliced and grilled teppanyaki style as well. It is then dabbed with wasabi and presented with crispy garlic chips. When the decadence is over, adjourn to the main dining hall in the restaurant, facing the glittering waters.
