From 13 to 28 February, partake in Lunar New Year feasting at Carlton Hotel’s Wah Lok Cantonese Restaurant. Have a go at the healthy raw hamachi salad, Soon Tak-style ($60) — a yu sheng made with fresh hamachi slices, shredded cucumber and ginger, and topped with a hint of lemon and soy sauce. Other delicacies not to be missed include an unctuous stewed pig’s shank with broccoli, black mushrooms and Chinese spinach ($26 for half portion; $52 for full portion) and the poon choy platter ($868 to $1,188 for six to 10 persons), comprising a luxurious spread of suckling pig, roasted duck, baby abalone and Tianjing cabbage.
