When The Garden by The Sentosa Resort & Spa introduced the concept of ‘conscious dining’ to the local dining scene, many took to the restaurant’s empowering notion of ‘knowing what you are consuming’ and Executive Chef Michael Leibl’s wholesome contemporary cuisine featuring organic and healthy twists. The Garden’s new menu is set to excite diners’ taste buds once again with an array of original and tantalising dishes.
Catering to mostly guests at Spa Botanica who would prefer a one-course meal in between spa appointments, The Garden’s lunch menu features two new sections: ‘Stick’n Bowl’ and ‘Held’. ‘Held’ comprises sandwiches and wraps such as tuna pancake ($24), organic potato and paneer burger, and shredded beef wrap while ‘Stick’n Bowl’ presents refreshing takes on popular noodle dishes such as prawn noodles and soba-Portobello mushroom. We especially liked the organic wheat germ pasta ($29), featuring tender slices of tuna gently cooked sous vide-style at 56ºC, baby octopus confit and a tangy medley of pickled lemon, zucchini and basil. The corn tagliatelle is also a hit with its organic corn pasta, pesto chicken, roasted chicken dust (baked chicken leg that has been dried and turned into floss) and fluffy leek emulsion. The combination of flavours and textures made for an invigorating dish indeed!
On the dinner menu, new highlights include the Australian hamachi , poached in saffron oil and topped with broccolini, amaranth, peanuts and coconut; and a flavoursome dish of skate. Served with pequolio pepper purée, heart of palm salad, coriander marination and fresh coconut, this dish is Chef Michael’s novel take on the well-loved sambal stingray.
For desserts, you would do well to order the Five Fruits — fresh and frozen. This palate cleansing platter of watermelon, pineapple, papaya, green apple and banana sorbets and fresh fruits is a delight to both the belly and the eyes.
The beauty of the menu at The Garden is how Chef Michael and his team uses quality ingredients — sourced from organic or bio-dynamic farms where possible and when available — and immense creativity to create such healthy and light, but no less tasty and satisfying, dishes.
