Situated with one of the most elegant views you'll find on Sentosa, The Cliff also offers a new menu to please the palate.
One of the new appetisers, the tasting of tuna, features a tartare with curry-saffron reduction, fried crumbled watermelon together with a ‘maki' of smoked aioli and shiso pesto. These were refreshing and set the tone for an exploration of unusual textures and flavours for the evening.
The multi-grain soup is as much a delight to look at, as it is to eat. Combining an aromatic mix of caramelised butternut and pumpkin seed, the soup is light but packed with flavours to give it a very homely warm feeling.
For something more unusual and for those a little more adventurous, rabbit is accompanied by porcini and rucola fricassée with a vanilla risotto. Smoothly flavoured and lightly balanced, the risotto is also topped with a cheese cracker and parmesan espuma which adds a sharpness to the vanilla flavour.
The barramundi is equally enticing, with crisp pan-fried skin served with olive oil mashed potato, pickled fennel, prosciutto ‘floss' and a broth you'll want to drink up. The overall combination works well with each other and the pickled fennel really brings an extra bite to the dish.
To finish off the experience, The Cliff Lemon Tart is not to be missed. With a mix of sweet and sour that will tickle your palate, the fluffy lemon cream and yuzu curd is offset with some lime zest fizzy crumble, gin and tonic jelly, tonka bean ice cream and yuzu sorbet. Even if dessert isn't your favourite course of any meal, this is one dessert you'll be happy to keep looking at.
Be warned though, The Cliff is not for the warmly clad. Part of the charm of this award-winning restaurant is the fact that it's entirely al fresco, so the wonderful views are never obscured by windows.
