Singapore Seafood Republic

Singapore is spoilt for choice when it comes to seafood establishments. And now, four of some of Singapore’s best-known seafood restaurants have joined forces to create the ultimate destination at Resorts World Sentosa.  Combining their menus, chock-full of their classic favourites, diners can have a taste of all four of the seafood restaurant kings under one roof.

Located along the still-developing waterfront at RWS, the colonial styled Singapore Seafood Republic , it is hard to nominate a specialty when much of the menu are all specialties in their own right.  Diners are sometimes left to guess which dish originates from which restaurant: Tung Lok, Jumbo Seafood, Palm Beach Seafood and Seafood International Market & Restaurant. Some may notice the creamy, rich consistency and tickle of peanut butter sauce when feasting on Seafood Republic's succulent chilli crab.  Or the spicy, buttery textures of the white pepper crab.  The list goes on with a total of 9 differently prepared crabs. The coffee glazed pork ribs are also a marvelous bite, with its delightfully singed corners and sweet sticky coating; while the miso wasabi prawns are delicious, fat juicy portions of the shellfish.

Perhaps the biggest surprise at Singapore Seafood Republic is their offering of a wine that pairs well with all three chilli crab, white pepper crab and black pepper crab. The Saint-Anac Moelleux Bordeaux with its mellow honey aroma, is a lovely complement to the chilli crab, bringing out the subtle peanut flavours of the gravy, whilst a buttery sweetness comes forth from the wines as it is paired with the white pepper and black pepper crab. The wine menu is otherwise limited, but who needs an extensive list when one wine will do it all.
