The white truffle season has arrived once more, and this time, they come fresh from Alba Italy, where they are highly prized. Eaten raw, cooked or enjoyed in the form of juice, Executive Chef Gabriele Piegaia has designed a 5-course set menu to best experience this delicacy. Priced at $368 per head, diners will get to appreciate how the edible fungi enhance dishes such as Wagyu beef tenderloin, homemade tagliolini butter and parmesan and even oven-baked apricot crostat with milk ice cream.
