San-sui Sumiyaki

Restaurants and bars at One Fullerton afford an excellent vista of the Marina Bay Sands’ towering structures dominating the city’s skyline. Over at the three-month-old San-sui Sumiyaki restaurant and Tsuki bar, you get to soak in this view while sipping a glass of chilled sake or shochu. This contemporary chic venue offers fine Japanese cuisine as well as an impressive list of drinks – perfect for convivial after-work gatherings or a languorous weekend meal.

Kick off with an aperitif such as the refreshing yuzu umeshu and munch on deep-fried Japanese long yam (akin to crispy French fries) or fugu mirin –imported puffer fish soaked in mirin, air-dried and lightly grilled.The well-thought-out menu includes poultry, seafood, premium wagyu beef and kurobuta pork prepared sumiyaki style. The chefs use traditional charcoal grill fired by premium binchotan, a high-grade white charcoal, which is smokeless and burns well at high temperatures. So when the items are grilled, all the natural flavours are nicely sealed.

Some of the recommended yakitori include the peta or chicken hip skin enhanced with just a sprinkling of salt, and tokusei tsukune – minced chicken seasoned with spices and added with bits of chicken cartilage for extra crunch. The chicken meat is incredibly juicy and aromatic thanks to the charcoal grilling method. Other items that go well with Japanese beer or sake are the grilled enoki mushrooms wrapped with premium wagyu beef slices, and fragrant shishito (Japanese chillis) coiled with tender kurobuta pork slices. You can complement these with a dollop of miso or a sprinkling of chilli powder. The imported Japan squid slices soaked in mirin for 24 hours, air-dried for a few days and grilled are highly addictive. All they need are a squeeze of lemon and you won’t be able to stop eating. The grilled Japanese mackerel also soaked in mirin and then air-dried is another crowd-pleaser that is great for sharing.

For a non-grilled dish, try the silky soft tofu topped with shitake, shimeji and enoki mushrooms, and bathed in stock made of mirin and shoyu. A comforting dish, great for rainy days. For a dose of carbs, order a mini chiraishi sushi – a small bowl of Japanese rice topped with cubes of fresh salmon, tuna, and salmon roe or a grilled rice ball. And finally if you must have sweets, ask for a refreshing yuzu or creamy matcha ice cream. The scoops are pretty large but they are worth every calorie.
