The menu of this tapas bar that has recently opened up on Lorong Mambong in Holland Village is designed by Chef Alfred G, a local chef who has spent the last two decades traversing the world to enhance his Mediterranean culinary repertoire. “Sabroso” in Espanol connotes tastiness and deliciousness, and the quality of the food certainly lives up to its name. Although the pan-broiled Canadian scallops in shallot butter and sparkling wine cream sauce was rather ordinary, and the meatballs served with smoked caciotta cream sauce were a little too dense, we were very impressed by the soft and creamy deep-fried Jamon béchamel croquetas. And there is the roasted bacon-wrapped Iranian dates glazed with honey and lime zest —the bacon yielded smoky, savoury flavours that were delicately complemented by the restrained sweetness of the dates.
