Sabai Fine Thai by the Bay is the second outlet of fine dining restaurant Sabai at Ngee Ann City. Fans of the original will be pleased to savour the signature red curry with roasted duck with whole sweet lychees at this sophisticated sister establishment, just two weeks old. In addition, the menu caters to busy executives and modern palates, with matching red wine and inventive cocktails to go with nibbles such as miang sabai – herbal chicken floss wrapped in a betel leaf, deep-fried stuffed chicken wings – expertly fried – and spicy lemongrass salad, in which tender shoots were thinly sliced and addictively crunchy. Spice levels are kept authentic, as in the stir-fried squid with holy basil leaves, chilli and peppercorn, and clear tom yam gong, but never deadly. Sabai’s Thai version of the mojito is a hit, with lemongrass, ginger and Cuban rum in perfect harmony.
