Hing Hwa cuisine is one of the least explored Chinese cuisines in Singapore. Light and brimming with flavours of the sea, it originates from Putian, located in the central coastal area of Fujian province. This modern-style Hing Hwa eatery serves dishes such as cold appetisers of crisp, iced bittergourd slices with honey dip and mini shrimp with crunchy seaweed. For hot dishes, a must try is the stir-fried yam that is as addictive as it is savoury, and the deep-fried tengiri fish of crisp slices of white flesh. For carbohydrates, there’s quite nothing like the Hing Hwa fried beehoon that is most delicious and with barely a hint of oil.
