Undoubtedly the highlight of Peony-Jade's Chinese New Year showcase is their ‘Harvest Your Riches Abundantly' lo-hei yu-sheng, which is specially designed and crafted - the culinary work of art takes two people, and over two hours to carefully put together. With each layer carefully positioned, the final piece features a dragon-shaped yu sheng made with 10 premium seafood like Australian lobsters and sliced abalone, Atlantic salmon, ikan parang, sea bream, swordfish stomach, tuna fish, octopus fillets, sweet shrimps and squid fillet. Enough for 10 to 12 people, the yu sheng is truly brought to life with the accompaniment of Executive Chef Ryan Shiu's secret plum sauce (though we managed to find out that yuzu and Korean pomelo are part of the recipe).

Another specialty of the restaurant's is the ‘Harvest Your Riches Abundantly' Gold Dragon Egg. Covered with a salt-baked crust, this is cracked open with chopsticks - the symbolism of which is to chase away the bad luck to make way for a prosperous, bountiful year. Inside the ‘egg' reveals a rich stew cooked over 12 hours with whole Australian abalones, leafy seadragons, organic black truffle, American sea cucumber, sakura chicken, shiitake mushrooms, Korean ginseng and fatt choy.

Peony-Jade also features a range of traditional dishes such as stewed golden conpoy, dried oyster and fresh scallop with fatt choy and seasonal greens, and the fried deep-sea grouper perfumed with chef's concocted sweet and sour sauce. The light but very flavourful wok-tossed ‘Good Fortune' premium fragrant jasmine rice with diced sea whelk, dried golden scallop, Yunnan ham and egg white is another must-try, while their premium mao shan wang durian mocha paired with freshly grounded and brewed almond cream with premier bird's nest - an interesting mix of flavours and textures that, surprisingly, works well for an indulgent celebration like Chinese New Year.
