Peach Garden Sichuan @ Miramar

Taking up the entire level three at Hotel Miramar is new tenant Peach Garden Sichuan. This is the fifth restaurant by the venerable Peach Garden Chinese Restaurant Group, famous for its classic Cantonese cuisine and warm and savvy service. The massive space is divided into the main dining hall and various private dining rooms, all elegantly and tastefully decorated. There is even an outdoor terrace – perfect for cocktails and events. The menu here features well-crafted Sichuan and Cantonese fare prepared by a team of chefs from Hong Kong and Sichuan. The chefs largely maintain the authenticity of the Sichuanese dishes but tone down the level of spiciness and oiliness to suit local palates. Not all the dishes will numb your tongue or make your lips tingle, but they are nicely executed in terms of taste and texture but tone down. Chilled chicken dabbed with spicy paste, chilli oil and sesame is an addictive starter. As is the classic Sichuan dish of thinly sliced pork perked up with piquant minced chilli and garlic. To balance off the heat, order the traditional double boiled minced chicken soup fused with spinach. The wholesome broth comes with very finely blended chicken akin to a cloud of tofu. To calm your palate, another delicate dish is sea perch wrapped around crunchy veggies and placed atop silky smooth steamed egg. Stir-fries are popular in Sichuan fare. Here the chef gives them a modern spin. He tosses prawns with fried minced meat, bambo shoot, oyster mushrooms and Sichuan sprouts, then serves them on fluffy steamed buns. The stir-fried lamb cubes with assorted mushrooms dish is just as noteworthy assorted mushrooms dish is just. The juicy meat is livened up with hints of hot Szechuan pepper. Look out for Peach Garden’s weekend live feast featuring specialties cooked ala minute from live stations. Accompanying the feast is a buffet spread of Sichuan and Cantonese delicacies. Those who hanker for dim sum served the old-school way – on pushcarts – can head to this restaurant on Sundays from 8am to 11am. The Opening Sunday Breakfast Promotion presents Dim Sum Breakfast priced at $18.80. Also available on Sunday from 11.30am to 2.30pm is the Live Feast Buffet Lunch at $33.80.
