Sometimes an innovative executive sous chef can transform a reputed restaurant into something extraordinary. And mezza9 is one such fortunate restaurant to receive this illustrious transformation from Simon Ruf. Ruf is a Swiss native, and was previously chef de cuisine at the luxurious Grand Hyatt Guangzhou, located in the capital of Guangdong Province, China. Before joining Hyatt International, Ruf had worked at an array of renowned restaurants in Europe, including the widely acclaimed three-Michelin star German Restaurant Barreis in the Black Forest, where he held the role of chef de partie. A kitchen wizard with deft hands who has a hidden talent of ball-juggling, Ruf enjoys playing the piano to unwind at the end of the day. Ruf and his culinary team at Grand Hyatt Singapore’s signature restaurant mezza9 have an irresistible offer that no gourmand would say no to. From 1 to 31 May, the feted restaurant will serve spargel – German for white asparagus. This seasonal delicacy is high in folic acid and is a good source of potassium, fibre, vitamin B6, and vitamins A and C.  With no cholesterol, no fat, and very low in sodium and calories, spargel makes the ideal dish for that perfect healthy meal. Diners at mezza9 can enjoy these white asparagus from Schweigen in Germany, specially prepared by our executive sous chef Simon Ruf, and paired with wines from the region. Menu highlights include: Cream of White Asparagus Soup, White Asparagus with Hollandaise and Poached Egg, White Asparagus with Herb Vinaigrette and Crispy Onion, White Asparagus with Hazelnut Butter, Steamed White Asparagus with Prawn Mousse and Ginger Paste, White Asparagus with Hollandaise and Serrano Ham
