Man Fu Yuan at Intercontinental Singapore has consistently been one of the top spots for fine Cantonese cuisine and dim sum. Dine amid elegant surroundings of this charming Peranakan-style hotel and perhaps have a drink at the beautiful lounge downstairs after your meal is over. The double-boiled yellow melon soup with assorted seafood and mushroom is a wholesome start to the meal. For a touch of luxury, there is a large variety of shark’s fin and bird’s nest items to choose from. But do order the restaurant’s specialties of deep-fried pork ribs with Zhen Jiang vinegar which is utterly satisfying. The tender meat melds perfectly with the sauce’s sweet and tangy flavours. The braised Wu Xi pork ribs are equally succulent. If you want something lighter, try the baked sea perch fillet with a mild garlic and almond puree. For your carbs dosage, worth trying is the Man Fu Yuan fried rice brimming with fresh scallops and conpoy. Round off with unique desserts such as deep-fried crispy pastry with Japanese sweet potato paste and cream of pumpkin with ice-cream and black glutinous puree. Level 2, 80 Middle Road, Tel: 6825-1062
