Level33

It’s the world’s first microbrewery located on the top floor of a skyscraper – and as we discover, home to also very good dining experiences. At 158 metres in the air, Level33 serves up admittedly fine crafted house brews on tap that comprise refreshing blond lager, India Pale Ale, and stout, all at about 4.5 per cent alcohol. A surprise find is the House Porter – inspired by stout’s British roots – which comprise stout and pale ale in a velvety smooth, fruity beer that pairs well with desserts. At just 24 years of age, resident brewmaster Christian Koch is looking to introduce seasonal brews that will refresh drinkers used to a heavier, industrial beer.

In the kitchens, another maverick, Executive Chef Jimi Tegerdine has been working with seasonal fresh ingredients to produce modern European staples. It was a delight to savour the melting beef tartare, classically prepared with raw quail egg, presented on a wooden board. Friends will do well to order the sharing mains, with Australian Berkshire pork rack stealing the show with its tender, flavoursome flesh wrapped in pancetta, and the 1.3kg whole lamb shoulder tenderly roasted on the bone. Create your own ‘beer tapas’ by ordering the following: a charcuterie board, generously loaded with cold cuts and rilettes, a tray of tempura black cod fish & chips, served bite sized, and a sizzling plate of 120-day-aged Angus cubed striploin, each of the six cubes bursting with flavour after being dipped in soy and smeared with wasabi. Should you wish to keep the good things to yourself, a starter of braised pig tail topped with snail was accented with rocket pesto, while the main of jumbo prawns in seafood bisque, chilli mango salsa and soba noodles perfectly capture the free spirited chef’s hand. Chef Tegerdine is trained in desserts, and it shows – the warm chocolate fondant oozed beautifully, accompanied by chilli raspberry compote and raspberry ‘caviar’, though the silent scenestealer was the crisp citrus praline on which a firm vanilla cheesecake ruled. It’s a new concept to embrace – fine beer and fine dining all at once. #33-01 Marina Bay Financial Centre Tower 1, 8 Marina Boulevard, Tel: 6834 3133
