Dining at Les Amis has always been an elegant affair. The team of waitstaff is knowledgeable, well-trained, and probably one of the best in this city. Resident Chef Armin Leitgeb continues to wow diners with his repertoire of light, contemporary and well-thought-out menu that places emphasis on the natural flavours of seasonal ingredients.
To kick off the meal, the chef presents a light warm cauliflower
emulsion, served with melba toast, luxurious caviar and uni, enhanced
with drops of avocado oil. This is followed by another light yet
satisfying dish of ciabatta wrapped Austrian white asparagus, partnered
with a perfectly cooked truffled poached egg. Mop up the runny yolk with
some warm bread and enjoy. The char-grilled Obsiblue prawn served with
earthy Japanese hen of wood mushrooms (maitake), and robust crustacean
stock is another crowd pleaser. The prawn after being grilled has a
lovely smokey flavour that mingles nicely with its delicate natural
sweetness. For mains, you will be served slices of succulent Kurobuta
pork loin accompanied by chanterelles, spinach and a delicately
flavoured ramp leaf (flowers from wild leek) puree.
A memorable
end to the meal is the cherry-chocolate beignet – with hazelnut ice
cream. The chef first pitted the cherries with a special fork, and
stuffed a pistachio nut into the fruit. He then dipped the stuffed
cherry into dark chocolate before deep-frying it. This results in a
sweet juicy treat with a thin dark chocolate 'crust'. A three-course
lunch is priced at $60 per person and four-course at $80 per person.
Four-course dinner is $180 per person and five course $220. 1 Scotts
