Il Cielo

Perched on the top floor of the Hilton Hotel, il Cielo, which aptly means ‘the sky’, is strongly rooted in Executive Chef Sandro Falbo and Italian Chef Stefano Arrigoni’s belief of natural, sustainable quality ingredients that are as close to natural and organic as possible. While it’s not a health-food restaurant per se, the produce that he picks for each dish ensures that you eat well.

Starting from $36 are the Bosco and il Cielo pizzas. This isn’t the place for commonplace pizzas like margherita – crunch on Rome-style pizzas with a crispy thin crust, that’s lightweight but heavy on flavours thanks to speciality flour from Vesuviana. The Bosco includes homemade Italian sausages with slices of truffle, while the indulgent il Cielo pizza has a mouthful of lobster meat and caviar on each slice. The restaurant’s open-fire brick oven is lined with olive and cedar wood for an aromatic appeal to the crackly crusts. For the first time in Singapore, you can also get freshly made a la minute burrata mozzarella filled with bufala – a “bufalarrata”, quips Falbo. The milky fresh mozzarella arrives warm on the plate, the deft parcel hiding its soft creamy bufala cheese core – a rare treat for cheese lovers.

Made fresh from grains such as kamut, buckwheat and spelt, are the restaurant’s in-house pastas in innovative shapes. Of note is the strangolapreti – a double-strand “choke-priest” pasta with slow cooked duck ragout confit with honey truffled cheese.  If angel hair pasta seems over-done elsewhere, here is the place to enjoy al dente capellini with Maine lobster in a pure tomato and basil sauce – no pretences, just classic technique.

In the same pizza oven, an ocean trout is smoked and presented on olive wood, served with saffron sauce for a delicate zing. Our favourite is the grilled US Mayer prime rib-eye with truffled mustard sauce and creamy potato square, boasting cruelty-free grass-fed flavour. Desserts are kept light as air here, whether you dig into the classic tiramisu, lemon ‘cielo’ tart with lemon sorbet, or the strawberry pannacotta.
