Hiroki88@Infusion is a 150-seater French-Japanese Bistronomy” that serves up the freshest ingredients. It juxtaposes French cooking methods to attain these stellar dishes, and the menu is helmed by 29-year-old chef Hiroki Yoshitake from Japan. Unbeknown to many, chef Hiroki was an assistant to three-star Michelin chef Pascal Bardot of L’Astrance in Paris. In addition, Hiroki was mentored by famous Iron Chef competition winner chef Sakai Hirokyuki in Japan. Today, the ebullient young chef has racked up11 years of culinary experience, and it’s no surprise that he also speaks fluent French thanks to his Gallic culinary tenure.
The cuisine at Hiroki88@Infusion is a fusion of harmony, balance of flavours and creative presentation. Jettisoning the mindset of creating a specific menu like any other restaurant would go for, Hiroki believes in creating a menu based on seasonal ingredients. For example, the Sakaura bark home-smoked fresh salmon on garden of beetroot and miso marinated foie gras with black sesame tofu, is a predilection of the chef’s insistence of utilising freshness of ingredients. Here, each ingredient has a distinctive freshness about it, but when combined together and popped into the mouth, it sends your palate into pleasurable overdrive. Another notable dish is the slow-cooked chicken breast with brown sauce, tori karaage, sliced grilled corn and green beans.
The well-marinated chicken breast is oozing with moistness inside while the tori karaage is irresistibly crackly and tasty. Mopped up with the brown sauce and complemented by the sliced grilled corn, it makes for an indulgent treat. Even squid ink pasta is handmade and paired with mango jus, cauliflower puree and pan-seared squid, that makes you desire for seconds. Hiroki also believes in making everything on his own, and that’s why he works seven days a week. The proud chef makes vanilla ice cream from scratch, so much so that it sits worthily with the caramel-crusted banana chocolate tart.
Diners can opt for three-courses at $48 or the six-course degustation set at $88. And with a la carte options starting at $8, you won’t be blowing a whole in your wallet.
Couples have much to benefit from this cosy restaurant. If you choose to sit indoors in air-condition comfort, you’ll be awed by the tall, old trees and creeping vines. And when night time comes, the trees are lit up by advantageous lighting, thereby, elevating the romantic ambience up a few notches. Lovebirds who choose to dine alfresco have up to 50 seats to choose from. Operating six days a week, from Tuesdays to Sundays, 6.30pm to 11pm, it should be your newest “to-do” in your culinary diary.
