If a one-star Michelin chef ever comes back to Singapore, he must be
doing something good and keeping diners sated. Indeed, Michelin chef
Lauren Peugeot is back by popular demand and is making his second
appearance at renowned Harbour Grill & Oyster Bar at Hilton
Singapore from the 3 to 8 May 2010. Chef Peugeot will present an
enticing spread of French-Japanese flavours this time round. In fact,
diners can look forward to this unique and elegant fusion cuisine that
has won rave reviews worldwide. As owner of the famed Le Charlemagne
restaurant in Pernand-Vergelesses, Burgundy, Peugeot will also share his
secrets and recipes in a Culinary Masterclass on Saturday 8 May. Last
year, gourmands were captivated by the fusion artistry of the acclaimed
chef. This May, look forward to luxurious and exciting nouveau creations
such as Foie gras de Canard with wasabi madeleine and eel, Lobster with
chawanmushi in big daikon, forest mushrooms cappuccino and vanilla jus
and Milk-fed veal in black olive sphere with black truffles scented
fleur de sel, forgotten vegetables stew.
Awarded the Best Young
Chef in 2006 by the influential Gault Millau French restaurant guide,
chef Peugeot's exceptional style combining invention, tradition and
refinement has impressed even the most conservative gourmands. A
Burgundian, he started his career as an apprentice at Lameloise, a
three-star Michelin restaurant. After his apprenticeship, he moved to
Japan where he studied at the French Le Cordon Bleu in Tokyo for several
years. Inspired and enamoured by Japanese cuisine, he decided to open
Le Charlemagne upon his return and has won many fans at home and abroad
since with his stunning culinary fusion of minimalist Japanese and
hearty terroir de Bourgogne. The restaurant was recently awarded a
rating of "3 Toques" and a special "Cuisine Créative" award for Chef
Peugeot's innovative cuisine by the Gault Millau 2010. Chef Peugeot's
other restaurants have also been awarded in the Gault Millau 2010 with
Sushi Kai obtaining "2 Toques" and KOKI Food & Shop with "1 Toque".
For
the Singapore stopover, Chef Peugeot will predominantly showcase
flavours of his hometown of Burgundy in the playfully named Burgundy
escargots as nuggets in a doggy bag, garlic milk to drink with a straw
and the famous Epoisses de Bourgogne cheese cooked as nougat with pear
and prune chutney, hazelnut biscotti. With a penchant for surprising his
guests speechless with his astonishing masterpieces and a deep passion
for perfection in his craft, do not miss the inspiring and progressive
