From the crisp white linens and perfectly chilled wines to the
impeccable service, it’s obvious to any diner that Guy Savoy at Marina
Bay Sands is marked by world class standards. This shiny new
establishment is tastefully designed, topped with glittering views of
the water and skyline. Calling the shots in the kitchen here is
Executive Chef Eric Bost (formerly of Guy Savoy, Las Vegas), who ensures
that every dish is perfectly executed, Savoy-style. The menu mirrors
the three-Michelin-starred gastronomic temple in Paris, and about 70
percent of the ingredients are flown in from France.
Highlights
include the signature artichoke and black truffle soup – thick, creamy
and perfumed with black truffle vinaigrette plus generous slices of
black truffle. This is paired with a flaky black truffle brioche
slathered in aromatic truffle butter – perfect to dip into the soup. The
lighter starter of heirloom tomatoes with baby summer vegetables, lemon
seaweed and icy cold granite of tomatoes is a lively blend of sweet and
tangy taste. Mains-wise, highly memorable is the pigeon served two ways
– a confit of pigeon thigh with deliciously crisp skin as well as
utterly tender pigeon meat wrapped around foie gras and rolled with
zucchini. This is served atop pigeon liver which lends a crumbly texture
to the dish. One of Guy Savoy’s signatures is the seabass – a thick
slab of the fish is harmoniously married with a delicate vanilla and
ginger foam and a sprinkling of Szechuan pepper, black and white pepper
perks up the fresh catch. Do match your meal with exquisite French wines
and champagnes from the restaurant’s bible-thick wine list or ask the
well-versed sommelier for advice.
At the end of the meal, all
eyes will be fixed on the fabulous dessert trolley. Just like a treasure
trove wheeled to your table, it is filled with French tarts, cakes,
macarons, marshmallows, pralines or more. There is also a cheese
trolley brimming with a huge selection of French cheeses. Guy Savoy also
offers afternoon tea from 3pm to 6pm at the bar lounge. The idea is to
serve classic home-made cakes and tarts as well as other sweet treats
reminiscent of childhood. Presented on the famous dessert trolley are
macarons, rose flavoured marshmallows, mini cherry tarts, pralines,
vanilla rice pudding served in shot glasses and many more gems. There
are sorbets and ice creams too. Standouts are the peach sorbet – with no
added sugar; just the natural sweetness of the fruit, as well as rich
