Brunch on the 78.0 is essentially a 78-metre buffet table that showcases the combined expertise of Executive Chef Arnaud Thulliez and two-star Michelin Chef Michel Portos. The epicurean journey begins with salad bars of garden-fresh greens and a lavish Japanese sushi and sashimi station. The Charcuterie platter features foie gras terrine, prune pate, Iberico and Serano Ham as well as cured beef jambon blanc. A combination of Western and Asian dishes, selections include grilled charlotte potatoes in artichokes barigoule, baked monkfish on mushrooms ragout, oven slow-roasted pork shoulder with Oriental spices and stir-fried flower clams.  The highlight of the afternoon is the whole Wagyu beef leg with jus Bourguignonne, slow-roasted for 32 hours to perfection. The brunch costs S$163 per adult, S$81.50 per child (six to 12 years of age) and S$40.75 per child (three to five years of age) and is available at the Greenhouse Restaurant and Chihuly Lounge from 12 to 3 pm.
