Forlino

Stepping into Forlino is almost like being in a different country all together – the black and white bordello tiles mark your entrance into the restaurant, as the gilded walls guide you into the main dining room, which offers a clear 180 degree view of the Fullerton Hotel, Esplanade all the way to the Marina Bay Promenade and Marina Bay Sands.

Under the guidance of Chef Patron Mario Caramella, who recently joined the restaurant at the beginning of the year, the ood at Forlino is a perfect accompaniment to the view, especially if you take advantage of the Restaurant Week Singapore menus, which will happen from 21 – 27 March. While most establishments have offered 3-course meals, Forlino felt they had too much to narrow the choices down, and instead have produced a 4-course menu for the special. It’s also a chance to taste the highlights of Chef Mario’s new Spring menu to be unveiled soon.

Staring with a delicate amuse bouche, which changes daily depending on the freshest ingredients that Chef Mario finds for the day. The crab salad with wild rucola, sweet pea leaves and cantaloupe is a refreshing mix of ingredients that bring to life the taste of the succulent crab meat.

One of the highlights has to be the homemade spaghetti with artichokes, mushrooms and pumpkin and liquorice cream. The pumpkin and liquorice add a zesty sweetness to the pasta, while the pasta is done and cooked to just the right texture to accompany the artichokes and mushrooms.

The Korobuta pork cheek braised in pinot grigio white wine is tender, and practically melts in your mouth. The dessert of rum ‘Baba’ sponge cake with strawberry sorbet and vanilla sauce is not for the faint-of-heart, or teetotalers. The delicate sponge cake isn’t just flavoured with rum, it’s drenched, soaked and thoroughly swimming in it – which makes it a lovely balance to the sweetness of the strawberry sorbet and vanilla sauce.

It’s the ultimate dining experience at an unbeatable value.
