The setting is gorgeous. Floor-to-ceiling windows at Forlino take full advantage of the stunning views in Marina Bay and tables are set well apart, and dim lighting and low noise levels add to the stylish ambience. While the menu offers mouth-watering dishes and the presentation is impeccable, there is some unevenness in quality. The cured cod and potato mousse antipasti, for instance, tends to be bland with only one note to its flavour. The octopus in the octopus salad is chewy but lacks the vinegary kick this dish requires. The lobster, scallop and prawn ravioli are, however, top notch, as is the Mama Forlino lamb chops. The seabass with liguria taggiache olives, while fresh and firm, is slightly disappointing, with the salty olives overpowering the fish. Ingredients clearly are very fresh and the breads, baked twice daily by the owner's wife, are delicious. For dessert, one must try the renette apple tarte with barolo chinato gelato.
