Clifford at The Fullerton Bay Hotel Singapore by night is a seductive, fine-dining brasserie; by day, it is no less chi-chi for lunch pow-wows and indulgent day outs. Our Monday jaunt to Clifford – to preview its Restaurant Week set lunch menu – placed us in the company of sharp-suited bankers, lawyers and executives, all sharing the sparkling overwater views of the Marina Bay area.
Seated on sumptuously upholstered chairs, we began with fresh baked in-house baguettes and breads which sported perfectly crisp crusts and went well with the complimentary duck rillettes. The bread almost outshone the grilled tiger prawn entrée, served with mango and avocado salad, which had fresh sweet flavours but lacked zing in its “spicy dressing” accompaniment. A mound of rocket leaves completed this carb-free appetiser, popular with the afore-mentioned business crowd. The main course of braised prime short rib is equally health conscious, served with glazed baby carrots and a square of potato Dauphinoise. Let the staff know if you prefer more fat in your meat for flavour, as not all portions are equally lean. The melting moment of the meal came in the form of a dark chocolate salted caramel tart served with a scoop of sorbet – as golden caramel oozes out of the tart, all business talk flies out the window. This dessert commands respect, and a steaming cup of earl grey to round off the meal.
