Fans of celebrity chef Susur Lee’s can sample his inventive creations this coming week when he’s in town for a short visit. The restaurant’s Senior Executive Chef, Ken Ling and his brigade of chefs are at hand to prepare the meals using premium ingredients such as oysters, wagyu beef, and shark’s fin among others.
Two six-course tasting menus are available from 26 to 31 July. At
$120++ per person or $190++ per person (with wine pairing), you get to
savour dishes such as crispy Peking duck skin; braised wagyu beef with
garlic greens as well as comforting oven-baked rice with juicy crab
claw. The roast fillet of marble goby served with delicious ‘sha cha’
sauce made of a blend of chilli, dried shrimp and hints of five spice
powder is ultra satisfying. Asparagus and black fungus lend extra crunch
to the dish, and a sprinkling of wolfberries some delicate sweetness.
Susur’s ‘Special Dessert’ is a sublime surprise. A quenelle of vanilla
ice cream is coated with crispy red rice puffs and crushed pistachio,
then encircled with raspberry, soft aloe vera cubes, green apple gello
and green apple juice. A refreshing delight packed with heaps of
appealing textures.
The second menu is priced at $160++ per
person or $260++ per person (with wine pairing). Start with the trio of
fresh Canadian oysters – each plump morsel is steamed and topped with
minced garlic; XO sauce; and black bean sauce. Enjoy this with exquisite
Bruno Paillard Premier Cuvee Rosé. This will be followed by a decadent
braised fresh superior shark’s fin with abalone jus perfectly matched
with Chassagne-Montrachet Les Chaumes, Roux Pere & Fils, Cotes de
Beaune. Besides those, you will also get to sample braised duck breast
with white asparagus and half tail lobster with chilli sauce as well as
steamed mee sua with lamb rack and pork ribs.The menus are meant for
