Watch out for French Chef Serge Vieira, who’s been touted as a culinary maverick to keep an eye on – he was recently awarded one Michelin star just six months after opening Restaurant Serge Vieira in March 2010. Vieira will be helming the kitchens of the Brasserie Les Saveurs at St Regis for lunch and dinner presentations during World Gourmet Summit (4 – 8 May).
The Cuisine de Serge Vieira’s four course lunch menu includes a Sarawak pepper grated lamb saddle with a lamb rack with spring artichokes and capsicum, tomato and onion condiment. Dinner by Vieira is a seven course affair, which includes a duck foie gras simply cooked and served with beetroot, a shellfish and crustacean dish, plus roasted pigeon, with spiced confit pigeon legs and pois blonds yellow split peas.
