As one of the three new restaurants that Shangri-la Rasa Sentosa Resort has unveiled after an $80 million makeover, Casserole is unique in that it presents cuisines spanning several continents – almost like taking a (culinary) journey under one roof.
From Indian and Moroccan to South East Asian and Western, all their dishes are served, obviously, in a casserole dish. Starters include freshly baked Casserole speciality breads served with a tangy walnut-based mohamara dip, the Casserole garden salad and two Casserole soups of the day.
There are classics such as beef bourguignon, slow-cooked beef with red wine, and eggplant and chickpea stew, a Mediterranean-inspired creation. The South East Asian courses, such as braised pork knuckle, cooked with mixed spices like star anise, cinnamon and clove, are all served with jasmine rice.
From the Indian and Moroccan kitchens, you won’t want to miss the Atlas lamb tagine, which is a leg of lamb infused with a mix of spices, saffron and honey and slow-cooked till tender. The homemade couscous served with each main course is wonderfully flavoured and complements the dishes perfectly. For something midway on the global spice route, Goan fish curry contains slices of snapper simmering in a piquant tomato and tamarind gravy.
Of course there are plenty of desserts to finish off the meal, such as the Moroccan after-dinner hot mint tea and the must-try baklavas, chockful of pistachios, almonds and walnuts with just a hint of rose water.
With so many choices, Casserole is just the right place when you’ve got plenty of mouths to feed, all with many different tastes.
