Classic French dining is revived at The St Regis Singapore as chef de cuisine Julien Royer takes over the reins at Brasserie Les Saveurs, the hotel's elaborate dining hall. Stylish elements of modernity have been intricately woven into the classical French brasserie-style of the menu - a direct result of Royer's expansive culinary training at various celebrated restaurants in France and the UK.
Highlights of the menu include a luxurious Black Angus tartar with black truffle emulsion and crisp radishes; and the roasted milk-fed veal rack with mashed potatoes and confit garlic topped with veal jus. For a taste of Royer's artisanal approach and obsession with quality ingredients and pristine flavours, order the simple but superb pan-roasted Atlantic cod with sautéed octopus gremolata, baby spinach and smoked garlic sauce.
The degustation dinner menus offer an excellent way to sample the restaurant's signatures. Choose from the four-course Astor Menu or the six-course Epicurean Menu. Alternatively, leave everything in the hands of the chef and go for the eight-course Carte Blanche.
If you are hankering for indulgent sweets, the menu does not disappoint. Our favourites include the tarte chocolat and the selection of cheeses from artisan cheesemaker Hervé Mons.
