Long considered a delicacy, especially in Europe, white asparagus is only available briefly during spring and can command a price of twice the green asparagus because of its limited quantities and the amount it takes to cultivate them. This year, Bonta Italian Restaurant & Bar will be presenting seven specially created dishes from Executive Chef Luca Pezzera, using white asparagus from Italy and Germany.
Keeping the dishes simple is key to Pezzera’s philosophy, so that the natural flavours of the asparagus shines through in each dish. There are three appetisers and four pasta and main course dishes to choose from.
The dishes not to be missed include the white asparagus alla fomarina, where the white asparagus are paired with eggs and black truffles; black angus beef tagliata served with white asparagus and whole grain mustard sauce, and the oven roasted Mediterranean scampi partnered with grilled white asparagus and herb dressing.
