Baits

Barely a month into its opening and Baits, the latest restaurant concept by Breadtalk Group Ltd, is already making waves on Sentosa Island. Seafood dishes with a local touch dominate the menu. The portions are good for sharing which makes this a good place to bring the entire family to refuel after a day at the Universal Studios nearby. During a recent visit for lunch, we found the restaurant packed with hungry diners and most had to endure a 15-minute wait minimum while constantly being tempted by the mouth-watering aromas coming from the open kitchen.
 
The soup of the day – watercress with pork ribs and chicken feet was a lovely start to the meal and would have made a perfect light lunch with plain rice, but we were too tempted by the ‘live’ drunken prawns to stop just there. Though usually we would have preferred not to get too “hands-on” with our food, the plump pink prawns in a robust herbal broth spiked with Chinese wine were worth the effort. Next up, chilli crab. Bait’s version of chilli crab done with meaty Sri Lankan crab in a tangy and lightly spicy sauce thickened with egg was enjoyable but is not be the best we have had as it had a little too much tomato sauce. And if other dishes on the menu such as crispy crab meat roll topped with fruit sauce and BBQ stingray do not stir your interest, then you may prefer to take your pick of fresh fish and seafood from the water tank and have the chefs prepare it to your liking. Fish can be steamed Teochew style with preserved vegetables or smothered in a mildly spicy creamy assam gravy.
 
Besides seafood, dishes such as the hearty braised beef brisket with melt-in-your-mouth radish and flavoured with Chinese wine) and crisp stir-fried lady’s fingers with garlic and dried shrimp are recommended as well. For something a little less elaborate, try the Baits Singapore-style chicken rice. Its fragrant rice, tender poached chicken and homemade chilli sauce, would please most diners, local and foreign. In addition to the Baits menu, diners are also able to order from Ding Tai Fung, which shares the same premise, and enjoy their piping hot xiao long bao and dumplings. 26 Sentosa Gateway#01-217/222, Tel: 6686 3565, 10am - 10pm daily
