Moving out of its urban Orchard digs and into a verdant garden setting, dessert boutique 1-Caramel at Rochester Park has expanded its range of sweets and savouries. It's definitely good news for customers at the newly opening Rochester Mall next door and new hotel Rochester Park Avenue Suites, who will be able to enjoy brunch - served daily - and innovative dessert creations.
To start with, there are five sweet soufflés - in flavours including miso, hazelnut and passion fruit, accompanied by ice cream or sorbet - and one gruyere soufflé, served with herb leaf salad. The miso that we tried with yuzu ice cream was slightly muted, though it was perked up by the zesty yuzu, while passion fruit with banana passion sorbet was a surprisingly delicate pairing. There are also eight a la carte desserts from head pastry chef Mimi Wahadi, which you can order in petite portions on sharing platters. Each assiette hold three to five creations - the signature baked Alaska is a good choice, with its mound of chunky strawberry ice cream, Italian meringue and nutty chocolate brownie. Death by Chocolate lives up to its name, using Varlhona Sofiato in a molten cake paired with dark chocolate sorbet.
On the everyday brunch menu, customers can look forward to pancakes and eggs Benedict, done here with Australian-style aplomb under the watchful eye of Group Executive Chef Christopher Millar. While desserts can veer on the sweet side, the coffee is impeccable - their special selections include piccolo latte, made with a single ristretto shot, and cappuccino topped with the ideal amount of steamed and frothed milk. As 1-Caramel's narrow seating space on the second-floor balcony may feel squeezy with 16 seats, you can request for the same menu at the One Rochester dining area on the ground floor.
