Chef Fukata used to cook for the Japanese Embassy; its loss is manila's gain. His Pumpkin Tofu melts in your mouth and the shrimp, placed delicately in front, is so fresh it crunches. Fukata’s tempura is also perfect, without a trace of oil, and equals that of Hyatt's misono at its height. The sashimi and sushi are extremely fresh. The quality rivals the finest restaurants in Kyoto as everything is plated beautifully. The chef is flexible and substitutions of meat for fish on the Sakura Kaiseki set can be made on request. Every ingredient is meticulously prepared.
