The Epicurean Express: Tofu

One of the most popular vegetarian dishes in Chinese cuisine is tofu, or beancurd. Made of coagulated soya milk, tofu is low in calories and fat but high in iron, making it a healthy diet option for those looking to slim down before the summer.

Unfortunately, tofu has the reputation of being bland at times and so Chef Tam of the Michelin-starred Yat Tung Heen in Eaton Smart hotel in Tsim Sha Tsui, is here to show us how to prepare it three different and equally delicious ways.

Ingredients:

Serves 2

- 1 ½ pieces of beancurd

- 2 pieces of Japanese cucumber

- ½ piece of salted preserved egg yolk

- 1 piece of spring onion

- 1 piece of Chinese celery

- 1 piece of red pepper

- 1 tbls sesame oil

- 50 ml chicken broth

- 50 ml marinade

- 2 tbls abalone sauce
