The Epicurean Express: Churros

Executive chef Michael van Warmelo demonstrates the classic Spanish dessert at Tapeo

In this episode of The Epicurean Express, chef Michael van Warmelo – executive chef of Concept Creations who not only opened two Tapeo tapas restaurants, but also Frites, the Belgian mussels eatery – demonstrates how to make the quintessential Spanish dessert, churros with chocolate sauce.

Ingredients:

For the churros:

250g plain flour

pinch of salt

50g unsalted butter

200ml water

100ml vegetable oil

50g caster sugar

2 eggs

For the chocolate sauce:

150g good quality dark chocolate

300ml double cream

½ cinnamon stick

1 whole chili
