René Redzepi Introduces Noma

Watch the video of the most famous new chef of 2010 talk about his inspirations, Denmark, and of course, his award-winning restaurant


When Noma was named the number one restaurant in the world by San Pellegrino this year, few people outside of Denmark had heard of the restaurant. In the months since, the restaurant has become standard culinary parlance, but for many, a visit to Copenhagen is still quite a trek.

Here at Asia Tatler Dining, we have a video of head chef René Redzepi talking about what cooking means to him, what the name “Noma” means in Danish and how he turned his culinary dreams into reality. While Redzepi considers himself a Dane, his Macedonian background enables him to look at traditional Danish produce as an outsider, and thus, using them in unusual combinations and placing them in new contexts.
