Epicurean Express: Red Velvet Cupcakes

In time for Valentine's Day, we head to Sift to learn how to make Hong Kong's favourite cupcake, the red velvet

If you're thinking of giving a thoughtful, homemade gift this Valentine's Day, we can't think of a sweeter present than baking your own cupcakes. Here in Hong Kong, Sift Desserts is by far the most popular cupcake bakery and so it's only natural that when we wanted to get a recipe and instruction video on how to make cupcakes, we'd go straight to the best.

In the video above, Jennifer Cheung, owner of Sift, shows us how to make her best-selling red velvet cupcake. Happy baking and Valentine's Day!

Ingredients (makes 18 cupcakes):

Cupcake mix

113g butter

260g flour

2tbs cocoa powder

1tsp baking powder

260g sugar

2 large eggs

1tsp vanilla extract

pinch of salt

2tbs red colouring

1 1/3 lukewarm water

200g milk

2/3tsp soda

2/3 tbs apple cider vinegar

For cream cheese frosting:

12oz cream cheese

4oz butter

1tsp vanilla extract

8oz icing sugar
