Setting
Located at the Central Pier No.7, Watermark possesses a 270-degree panoramic view of the Victoria Harbour. Unlike other restaurants with a similar view, Watermark distinguishes itself by letting diners hear the waves and smell the scent of the waters as they step into the restaurant. With its modern lighting and spacious interior, Watermark is an ideal location to spend a pleasant dinner with family and friends. |

Food
Start the meal with Watermark’s signature three-tier seafood platter that includes Boston lobster, blue mussels, diver scallops, Dungeness crab, tenshi prawns, sea whelks, Irish oysters, Tasmanian oysters, smoked herrings and almond clams. The platter is certainly generous, and all of the seafood is fresh and serve chilled with three different condiments – cocktail sauce, red wine vinegar sauce and tartar sauce. Our favourites are the sea whelk and oysters; while the clams are chewy and the only part of the platter that was anything less than fresh and enjoyable. Our other of seared duck foie gras with poached pear, baby spinach and muscatel reduction is perfectly cooked and a good introduction of the hot dishes to come. The prime dry aged Nebraska rib-eye has a wonderful fat proportion and robust flavour; but sadly is overcooked and not medium-rare as requested. The other main course of macaroni with creamed mushrooms, artichoke tempura and summer truffle is highly aromatic but although the artichoke tempura lends an interesting texture to the dish, it does land the dish on the oily side. To end the meal, we choose crispy chocolate bonbon with apricot coulis; and layered citrus terrine with honey sorbet. The former is a delightful and tempting dessert, perfect with Watermark’s surprisingly rich and smooth cappuccino, but the latter disappoints, as it is both too bitter and sour. |

Wine
The wine list at Watermark is not large, with bottles ranging from HK$300 to roughly HK$1,000. The servers are knowledgeable with the dishes and its wine list and are able to help choose a suitable wine from its limited selection to pair with the dishes. |

Weekend Brunch at Watermark
Brunch is no longer confined to Sunday and seeing the growing popularity of brunches on Saturdays, Watermark at Central Pier has extended its brunch buffet over the weekend. The new weekend brunch designed by chef Pascal Breant features all-you-can-eat seafood such as oysters, sea whelk and sashimi. Meat lovers will enjoy the roasted rib, duck, and spring chicken that are also available. Aside from the buffet, the brunch offer also includes an all-you-can-eat order from the a la carte menu with popular breakfast choices such as:

Tatler has to tighten up on the congruence of text with ratings. How can anyone in copy mention a restaurant having a 270 degree of the harbour and only give it a 3.5 star rating. I have commented on this before. Seems to me the editorial staff are inexperienced. |
