Setting
Inagiku at Star World Macau is the perfect venue to enjoy a warm and cosy meal away from the hustle of the rest of the gambling enclave. The bright and spacious main dining room is replete with chef’s tables for teppanyaki, sushi and tempura, each with comfortable chairs where diners are treated to a demonstration of the chefs’ skills from a front-row seat. There is also a private dining room that accommodates up to 16 guests.

Food
The menu of Inagiku is exhaustive with pages and pages of sushi, sashimi, tempura, teppanyaki to luxurious kaiseki set menu, all based on superior ingredients. To start, the comforting homemade beancurd (MOP80) served cold with dipping sauce with precisely cut spring onion, ginger and bonito flakes is a must. From the raw selection, sashimi is jet-fresh and presented at the perfect serving temperature. The supreme assorted sashimi platter (MOP550) provides a generous and diverse sampling. Not your conventional sashimi platter; diners can expect tantalising variations such as salmon tartar and sea urchin jelly. The famous tempura is another must-have - the tempura platter (MOP300) includes assorted seafood and vegetables selected by the chef and are good for two to share. Smelt fish is one of the selections on the night we visited and the tempura retains the delicate sweet flavour of the fish. The batter is light, crispy and delicate without a hint of oil, and encapsulates the moisture and texture of the fish perfectly. The seafood inaniwa udon (MOP250) is perfectly silky and chewy, a great accompaniment to the tempura course. To round off the delectable meal, ask the bartender to create some delicious cocktails using Japanese plum wine or sake, while the green tea creme brûlée is also a popular choice for dessert.

Pickled Sushi at Inagiku

In the past when there was no refrigeration facility, Edo fishermen used vinegar or salt to pickle raw fish to keep them fresh and edible, resulting in pickled fish and sushi. Pickled sushi is marinated with seaweed, sake, soy sauce and delivers a more intense flavour when compared to raw fish sushi. This spring, chef Isamu Moriguchi of Inagiku at Royal Garden is recreating the traditional flavour and presents a pickled sushi menu with fresh catches such as mackerel, dotted gizzard shad, snapper and more. The pickled sushi is also available a la carte during lunch and dinner.
