Setting
FINDS is located in the Luxe Manor hotel in Tsim Sha Tsui. The hotel itself is a rather gaudy affair but FINDS, tucked away on their first floor, is, fortunately, far more restrained. Despite being a Nordic restaurant it avoids the clichés of bleached wood and Ikea benches found in most Nordic restaurants. The decor is modern with elegant curved wood panels on the walls and ceilings with sleek wood and upholstered chairs. The only disappointment is the projected fireplace replete with fake burning wood which feels rather dated.

Food
FINDS is fundamentally a seafood restaurant; be it cured, baked, fried or in soup form. The classic starter is the salmon six ways which uses smoked, seared, mousse, pickled, gravadlax and roe salmon to good effect. The natural beef tartar is an unworthy alternative as is it obviously prepared well in advance which means the meat arrives dull and oxidised. The soup courses are better, with a Greenland shrimp soup tasting vibrant and pairing well with the fennel and dill. A lamb tenderloin for the main course shows that the kitchen is equally accomplished with meat dishes as seafood. The starters and mains are presented elegantly and with a light touch. Because of this great things might be expected from the desserts as they benefit from such a precise style. Unfortunately they are disappointing and the blueberry doughnuts come cold and stiff with the lemon tart being a clunky affair. Desserts aside, however, this is a restaurant that is cooking clever and, for Hong Kong, unusual food.

Wine
FINDS has a functional wine list with a selection of obvious white and red wines. There is, however, a good selection of wines by the glass which works well with the light, fish-based, cuisine. The wine list would benefit from pairing suggestions.

Service
The service is an unexpected delight with the waitstaff being eager to assist. Best efforts were made to explain the dishes and adapt them to personal preferences.
Price
Set dinner at FINDS is good value for modern European food in Hong Kong with three courses being HK$398, four HK$478 and five HK$568, Coupled with an inexpensive wine list it means that a dinner for two is likely to cost around HK$1,200.
