Canton, located amongst the madness of The Venetian in Macau, can be found in a secluded corridor off the main casino floor. The interior is a perfect balance between classic Chinese fine dining and modern neo-Asian chic. Dark wooden latticework, beaded hanging light fixtures as well as classic Chinese design elements abound. The semi-private booths, perfect for a romantic date, are especially charming as is the impressive selection of fine wines stored with Chinese liquors in traditional Chinese cabinets in the front window. The décor, like the dining experience itself, is decidedly high end while remaining relaxed and easy to enjoy.

The classic Cantonese cuisine served at Canton is served with great skill and exceptional execution. The dishes emphasise tradition over innovation but the results are hardly boring. The cold starters are pitch perfect: the “Ng Chiang” style prime cut jellyfish tossed with sesame oil (MOP98) is especially impressive. The double boiled chicken and pig stomach soup with white peppercorns (MOP80) provides an early high point to the meal. The pig stomach is succulent and delicious while the soup itself is deeply flavourful. Another revelation is Canton’s signature crispy chicken (MOP138). This consists of half a chicken with golden crispy skin separated by juicy, intensely flavourful meat by a thin layer of custard-like fat. The traditional Peking duck served two ways (330MOP) is equally expertly prepared. Although the pancakes that are prepared tableside may contain too many cucumbers and spring onions to suit everyone, the second serving option of fried minced duck meat served with lettuce cups are flawless. Other dishes worth trying are the stir-fried green beans with preserved olive leaves and minced pork (MOP80) and the chef’s favourite fried rice noodle with beef in chili sauce (MOP90). While good, the golden-fried prawns coated with wasabi dressing (MOP168) seemed average compared to the other exceptional dishes.

Canton has a large selection of wines available both as bottles and by the glass. The wine list covers most regions and budgets and contains a good amount of rare vintages and connoisseur choices. The staff is very knowledgeable the about wine and quick with a suggestion.

The service is prompt, professional and omnipresent without being overbearing. However, English-speaking customers may have a bit more trouble with the language barrier, as one of our orders was never relayed to the kitchen.

While not cheap by any means, the quality ingredients and expert execution ensure good value for your money. Dinner for two should be under MOP800.
