Setting
Brasserie on the Eighth at the Conrad offers the kind of setting you might expect to find in the more casual dining venue of a big, upmarket hotel. There’s very little here to provoke a strong reaction one way or the other, but if you’re looking for somewhere comfortable and reasonably classic to sup, you’re unlikely to go far wrong. Crisp white tablecloths are complemented by an understated colour palette of cream and beige, while an open kitchen set along one wall offers an unobtrusive opportunity to see the chefs at work. There are also views of the gleaming skyscrapers of Admiralty.

Food
The menu here is European brasserie style in essence, but incorporates Asian and other influences, too. Finding something that tickles your fancy is unlikely to be a challenge (unless you are a vegetarian) with a choice of 16 appetisers and 15 mains, plus a comprehensive selection of meat and seafood from the grill. “Healthy choices” are helpfully indicated for those who are so inclined, while a complimentary serving of pork and duck rillettes with mini baguettes are the perfect nibble as you ponder. Seabass, ahi tuna and ocean trout mille-feuille is as easy on the eye as it is on the palate; thinly cut layers of fish alternate with two types of melon to create a fresh and light dish that is set off by a drizzle of warm hoisin sauce. Burgundy snails are served in classic fashion, a half dozen of them baked and served in a garlic and fresh herb butter that you will doubtless mop up enthusiastically with your bread. Eight-hour braised veal cheeks is tender to the point that a knife is unnecessary, and the accompanying mashed potato soaks up the aged port wine sauce beautifully. Give the paella with seared duck breast, duck leg confit and grilled Boston lobster a miss, however. Despite being a signature item, this dish – which also contains chorizo and mussels – just had too many strange bedfellows vying for attention, and yet somehow managed to be disappointingly bland on the whole. Desserts, in particular the chocolate trio, are attractively plated and sinfully sweet.

Wine
The wine list is extensive and varied, with a well-chosen combination of old and new world wines. Perhaps most impressive is the by-the-glass selection, which features about 20 options that range from the familiar to the unusual. Unsurprisingly, there is a particularly strong focus on French and Italian vintages.

Service
This is where this venue really excels. The staff is not only knowledgeable and helpful when asked for recommendations, but also very friendly and accommodating, greeting the many regulars by name.
Price
A three-course meal costs about HK$700 per person, excluding wine, but can easily top HK$1,000 per person if you order a US Creekstone steak from the grill.
