Located on the top floor of the Hotel Panorama by Rhombus in Tsim Sha Tsui, Ava is understated and elegant, sheathed in natural, tan and grey tones. Food
Start with the fantastic blue crab soup – the flavour of the slow roasted crab shines through and the broth is wonderfully creamy yet light. The duo of crab, a refreshing composed salad made with blue swimmer crab, citrus, creme fraiche, mango and avocado, arrives in an impressive ice dome atop a pile of ice pebbles. The balance of flavors will delight the palate and the presentation of the dish is a work of art. For a heartier starter, try the wild mushroom ravioli, stuffed with parmesan and ricotta cheeses and served in a charming cast iron pot with a savoury mushroom broth reduction. The duo of beef, made with Rhug Estate meat shipped from Wales, is a combination of tender pan-roasted ribeye cooked to order and slow-roasted short rib served in potato sculptures shaped like bone marrow. For a taste of the American Northeast, try the Boston lobster, slow poached and infused with saffron – the lobster is fresh and served with a delicious savoury egg custard and sous vide baby turnips. For dessert, opt for either the signature ice cream or the crepes Suzette – both are prepared tableside in an impressive show.

Ava’s wine list is thoughtfully selected, with some good options available by the glass. The wine menu describes the wines aptly and includes options to please everyone.
