Flowers on dishes are by no means a new concept, but they are usually used as a garnish. Highlights from chef So Kei-pak's creations include:

In the past when there was no refrigeration facility, Edo fishermen used vinegar or salt to pickle raw fish to keep them fresh and edible, resulting in pickled fish and sushi. Pickled sushi is marinated with seaweed, sake, soy sauce and delivers a more intense flavour when compared to raw fish sushi. This spring, chef Isamu Moriguchi of Inagiku at Royal Garden is recreating the traditional flavour and presents a pickled sushi menu with fresh catches such as mackerel, dotted gizzard shad, snapper and more. The pickled sushi is also available a la carte during lunch and dinner.
