This week we head to Casa, the private kitchen in Mid-Levels, to learn how to make the perfect steak tartar: an appetiser that we thoroughly adored from its Land & Sea tasting menu. Steak tartar is a decidedly simple and delicious appetiser, perfect for serving at rustic and friendly dinner parties at home.

Ingredients (serve four):
500g beef tenderloin
¼ cup truffle aioli
1 bunch minced shallot
1 bunch minced chives
1 bunch minced parsley
2 tbs sriracha chili sauce
2 tbs light soy sauce
Sea salt, to taste
Black pepper, to taste
Lemon juice, to taste
Parmesan cheese
Farmed caviar, to garnish
Truffle Aioli
8 egg yolks
500 ml grape seed oil
1 tbs dijon mustard
5 tbs roasted garlic
