January is traditionally a month of detox, purging all the toxins that we had so much fun taking in throughout December. You know that our need to detox must be serious, if even the Demon Chef, Alvin Leung of Bo Innovation, is getting into it. Starting on January 9, Beautifood will start offering salad designed by Leung. With a minimum of five orders, orders will be delivered from 10am to 12.30pm, to Admiralty, Causeway Bay, Central, Happy Valley, Quarry Bay, Sheung Wan, Ap Lei Chau and Wan Chai. Only 250 of each salad are made each day, so make sure to order early.

For the New Year, the salads are priced at HK$38 (the regular price is HK$78) and salad options include:

- True 8 Chef Salad with a local vinegar, eggs, tomatoes and beets

- Demon Caesar with chicken breast and spices

- All Green Salad with sesame, kaffir lime and tofu

- Mandarin Nicoise with tuna

- Ling Mut Salad with chicken breast

In light of the recent avian flu, many of us may be wondering just when restaurants will start serving local chicken again, or whether they will start importing chickens from abroad instead. Yardbird, the extremely popular chicken yakitori specialist, which has always prided itself on using fresh local chicken from the New Territories, for one has made the switch from local chicken to chickens imported from Kagoshima from Japan.

Also, as a number of the chicken dishes will be suspended in the meantime, chef Abergel will start serving some replacement dishes made with other meats including a pork belly with roasted garlic and miso;  pork neck with Welsh onion and miso; and whole lobster with kimchi.

Japanese chef Masaharu Morimoto is well-known as Iron Chef in both Japan and America. He was executive chef at Nobu in the late 1990s and since then has opened his own chain of Morimoto restaurants in New York, Tokyo, Napa Valley, Hawaii and most recently, Mexico City.

For those of us who are curious to the culinary skills of an Iron Chef will get a chance to satiate our curiousity when chef Morimoto opens a pop-up restaurant at the Landmark Mandarin in Central on January 16-18 in the Tian and Di function rooms.

Morimoto's ten-course menu at the pop-up restaurant will include dishes such as octopus carpaccio with white truffle; foie gras trio; Saga wagyu beef A5; and miso butterscotch pudding with chocolate black tea foam. Available for three nights only, the dinner is priced at HK$2,888 per person and for an additional HK$888, guests can enjoy a wine and sake pairing with the meal.
